　新生児の胃酸分泌は生後２４時間で確立されるが，成人に比較して胃酸分泌反応は低い．蛋白質を分解するペプシンは，新生児期にはまだ重要な働きをしていないと考えられている．新生児期における蛋白質の消化と吸収は主に十二指腸と空腸で行われる．十二指腸で蛋白質はトリプシン，キモトリプシンなどにより分解され，オリゴペプチドやアミノ酸となり，オリゴペプチドは小腸粘膜でオリゴペプチダーゼにより分解され吸収される．
　また，蛋白質分解酵素の活性が低いことに加えて，異種蛋白の吸収を妨げる免疫グロブリン（IgA）の産生がないため，生後６か月頃まで高分子の異種蛋白の吸収を妨げることができない．」
